Since my days off are usually one at a time, I've decided to create a recurring theme for the posts I write about those days' happenings: <b>Dear Day-cation</b>.<br />

Saturday was filled with sweet treats, hot spiced tea, and happy toddlers frolicking about. It was my sister Jennifer's baby shower so I went up to LA to spend the day with her, some lovely ladies, and their babies. Jenn is having a baby girl in a few weeks (maybe less!) and we were all excited to get a head start on welcoming the new baby girl into the world.<br />
It was a delicious little get together and there were only about 10 of us this time, so it made for a really intimate and quaint afternoon. Jenn's first baby shower about 2 years ago had about 30 people and I catered all the food for it. It was mainly just salad, hors d'oeuvres, and canapes and I enjoyed it, but it was definitely a lot of work! This time, I decided to only make cupcakes for dessert to share with the ladies and <a href="http://www.joansonthird.com/" target="_blank">Joan's on Third</a> catered a lovely lunch. Jenn's boyfriend's talented and crafty sister, Edie, did all the decorating.<br />
The cupcakes were a hit and I was so happy to see everyone enjoying them. I made two flavors: Vanilla Bean (that I garnished with edible flowers to go with the floral theme Edie had goin' on) and Pink Lemonade. They were really fun to decorate, especially the Vanilla Bean ones. I sprinkled sanding sugar on them and then added some marigold petals and dried lavender florets. I bought cute little paper cups to bake them in at Sur La Table and I think they really added a special touch. We also had some other talent add in their touch to the dessert table - there was a chocolatey Marble Bundt cake made by my mom and really delicious and chewy cookies that Edie's mom made.<br />

It was one of the first real fall days here in So Cal. It was a beautifully clear and brisk and only about 61 degrees or so...a temperature I am all too excited to welcome -with warm boots on my feet and a scarf around my neck!<br />

Speaking of babies, I can't get this song out of my head since I heard it on the radio while driving home from work the other night. I love early 60's music like this and hope you enjoy it too!</div>

One of the things in my life that I did and I am so grateful for is going to culinary school at a community college, and not an expensive private school. I funded my schooling completely out of pocket, didn't take out a single loan, and I'm so glad I did. The harsh reality of the restaurant industry still sends shivers down my spine...well not really, but how would you feel if you had just spent somewhere between $50,000 - $100,000 on school, graduated and got a job making somewhere between $9 - $11 an hour for the first 4 (at the very least) years of your career?<br />
This is the harsh reality I speak of. Oh yeah, and forget any sense of a work/life balance. Work in a restaurant and you belong to it. You may as well sleep there, especially if you were like me and you were crazy enough to commute 60 miles a day to get to and from work! Most of my days were like this: Sleep til 11am, get to work around 1pm, work (hard! physically intense) til about 11pm, sometimes later, get home at about midnight, have a bite to eat and unwind in front of the TV, and then go to sleep at 2 or 3AM.<br />
I burned out fast as most people do. This is the job that isn't for everyone, and I sure was one of those people. I'm the type of person that always wants to do my best in the jobs I am hired to do, but the amount of daily prepwork involved in my station and the stress and anxiety of not having anyone to help me really put a damper on my spirits and made me feel like I wasn't able to put out my best effort.<br />
Enough flashbacks! The reason why I am sharing this is because I wanted to write about the difference between a cook and a chef. A lot of people finish culinary school and think that they're granted the title of chef. Or friends and family members who haven't the slightest clue about the way the food biz works refer to you as a "chef" once you finish school. Think again, my friend! The road to becoming a true chef is a long and windy one. One I couldn't finish.<br />
I'm sure a lot of my old fellow line cooks are chefs now, running their own kitchens and writing menus and such. But for us little guys, who still take orders from those above us and are still honing our knife skills, oh yeah, and we still make somewhere between $9 and $15 and hour, we are cooks.<br />
"Chef" isn't a title that just gets handed to you with the piece of paper when you graduate from Le Cordon Bleu. It's something you work extremely hard for, day in and day out, missing out on time with family and friends, on holidays, on weddings, on birthdays, and funerals (this is a little extreme but my Chef at The Montage said it himself). It's a title you earn and you should be humble about. I can't tell you how many kids I went to culinary school with who had this whole "I'm a badass" attitude on them. I'd like to see where they are now. I wonder if they made it past being the prep cook who gets yelled at by their chef to clean up the spill of corn chowder and marinara sauce that one of the lunch cooks tipped over from their 5-gallon buckets in the walk-in refrigerator (this didn't specifically happen).<br />

Leaving the restaurant industry was one of the best decisions I made. It has given me a lot to be thankful for and makes me think after a hard day at my job now (manager at Peet's) that things could still be worse. Whether you like it or not, a lot of retail stores have already put up their Christmas and/or Holiday displays. Halloween was just barely a week ago! Alas, this is the consumerist society we live in, and companies are ready to start cashing in on their most profitable time of the year (hey, you can sing that to the tune of "The most wonderful time of the year").<br />
Well, they've got me, too. I've already got my "Holiday gifts and treats" board going on <a href="http://pinterest.com/natawii/holiday-gifts-and-treats/" target="_blank">Pinterest</a> (hey, I hate being rushed). I actually just made my first hoilday purchase, but only because it was a baby shower/holiday gift combo purchase. I wanted to share this super cute kids company I found through Real Simple, called <a href="http://www.blablakids.com/" target="_blank">Blabla kids</a>. Children's toys and dolls have gotten to be so cute over the past years - it's so easy to find tasteful designs that are elegant and practical at the same time - and these products are no different. Florence Wetterwald is the name behind the design, whose knit dolls (amongst other things) are made in Peru by Peruvian artisans, using local,high-quality natural fibers. All their stuff is so adorable and I find it inspiring (I want to make something like this!) and hard to resist (I want to collect them all!)<br />

It's so nice here in vacation-land and I never want to leave. But alas, vacation ends this week and in a couple weeks it will be holiday madness in the retail world. So let's reflect on the past week and a half, since it has been so wonderful, shall we?<br />

My hubby Eek and I drove all the way from our little apartment in Irvine to <br />
<a href="http://www.ashland.or.us/" target="_blank">Ashland, Oregon</a> in a day. It was about a 12 hour drive and not a very exciting one, since we took the I-5. We stayed the night in this quaint little town, famous for its annual Shakespeare festival. The following morning I had the most delicious mocha at a coffeehouse called Noble Coffee Roaster. It even looked beautiful too.</div>

We had a cozy little breakfast of coffee and pastries and then decided to take another 4 hour drive up to Bend, which is a little mountain town in central Oregon. Bend is a outdoor enthusiast's dream town - there is plenty to do for the mountain biker, fisher, hiker, rock-climber, white-water rafter, and skier. Since I am basically none of these things besides a hiker, what I enjoyed most about this little town were all the trees. Here in Orange County and LA, you really don't see a lot of them. It was so nice to get away to another part of the country to really appreciate the simple things. The leaves on the trees were just starting to turn beautiful colors, too. I'm sure in another week or two they will be just gorgeous.<br />

On the way home, we stayed the night and camped in Redwood National Forest, aka the Ewok Forest....they filmed one of the Star Wars films here. Enter this forest and you literally feel like you are in a different time or world. Everything is so incredibly green and lush. Ferns and moss grow all over the place and the trees are prehistorically breathtaking.<br />

We also had the opportunity to visit a few breweries on our trip. Deschutes in Bend, named after the river that runs through the city, and Russian River in Santa Rosa, CA, were the most note-worthy. According to my calendar (and the rest of the country), summer is
ending and Autumn is beginning. Here in Southern California however,
it's still at least 80 degrees everyday. This past weekend we hit record
high temperatures, in the 90's and even 100 degrees in some areas! I
felt like I was in Palm Springs.<br />
Luckily, that fluke only lasted a couple days, and so far this week
has been cooler, especially in the evenings and mornings. I can't help
but long for a true Autumn but know I will have to wait another month
for those very warm days to go away.<br />

Stewart Living just arrived and on the cover, fall was screaming with
its harvest of delights. I was inspired alright, and even though it's
still warm, I was determined to bake some fall-ish treats. It is, of
course, my favorite time to cook and bake!<br />
First
up on my list of delicious things to make: Iced Pumpkin Scones. I made
these last year and they were so incredibly easy and yummy. So I found
the recipe I used (found on <a href="http://pinterest.com/natawii/yummy-food-i-want-to-eat/" target="_blank">Pinterest</a>) and dove right in this afternoon.<br />

I cannot even begin to tell you how much of a difference in aroma and
taste using whole nutmeg and grating it yourself makes compared to using
the pre-ground
stuff. The spicy sweet smell of the cinnamon, nutmeg, ginger and clove
filled my kitchen when I started to work the butter into the flour-spice
mixture! <br />
It's interesting how certain smells can trigger
memories. Since I really only cook or bake with pumpkin this time of
year, I was taken away to Thanksgivings of the past as soon as these
puppies started baking away in the oven.<br />
Of course, these scones wouldn't be the same without a sweet spicy
icing on top. Powdered sugar mixed with milk and all the aforementioned
spices really made these scones. So delicious! <br />

Autumn may be right around the corner according to my calendar, but we all know it really still is summer here in So Cal...<a href="http://en.wikipedia.org/wiki/Indian_summer" target="_blank">Indian summer</a>.
But you know, it doesn't mean I can't enjoy a sip of a chai latte, take
a bite of these pumpkin delights, and go to a crisper, cozier place in

It's something about the whole "everyone does it" thing that I can't stand. People make their goals and never meet them. They go on fad diets for a couple weeks and then return back to their unhealthy lifestyles. They make these life altering resolutions and then come February, are back to their old ways. I just think it's stupid.<br />
However, there are things that I would like to focus on in this upcoming year, and writing them down will help me feel less overwhelmed and keep myself accountable.<br />
<br />
Here are a few things that I want to do next year:<br />
1. Exercise more often. The whole month of December was a total flop. I got out of my workout routine and notice a difference in my energy levels and my overall feeling of strength. Come January, I will need to get back into my fitness routine. I want to get back into running a minimum of 12 miles/week. A 10-15 lb weight loss is my goal over the next few months and I know that with the right amount of motivation, I can achieve it.<br />
2. Get more organized. Eric and I have been weeding through all the things that just sit around our little apartment. We don't use them, why should we own them? The good thing about living in a small space is that it is a bit easier to control the chaos. We have already made several trips to the Goodwill and plan on doing more over the next few weeks, too. I went through part of my wardrobe a few days ago and am forcing myself to get over holding onto clothes. If I haven't worn it in a year or I never felt that comfortable in it, it goes.<br />
3. With the organization, comes the reward of new furniture. I want to save up money this year so that we can get a nice dresser (and maybe nightstands and bed set) that we will be able to fit our clothes comfortably in. I would also like to buy some wall shelves for all the rooms in our apartment because it would help with our lack of storage. I have this fear of making holes in our walls/putting heavy this up on the walls because of my lack of handyman expertise...I need to get over this!<br />
4. Pay off credit card debt. I've had a small amount of credit card debt that I've been holding on to for the past couple years. It needs to go away. This year. It is a manageable amount that I need to focus on and get rid of, every month.<br />
5. Keep working on building my bakery. This past year, I decided that I wanted to start a baking company. I told myself that I would take a year to develop recipes and come up with a business plan. It is something that I work on often but it gets hard to manage my time sometimes. I need to create a schedule for myself of things I would like to try making this year and a timeline for myself. I will also finish designing my business card which I started a couple months ago. I think I am doing a pretty good job of staying at everything I mentioned about starting the business, but I could be a little more persistent. If I create a schedule for myself, it will be a little less overwhelming and more organized.<br />
6. Trust my gut. I think we all doubt ourselves sometimes. That makes others doubt us and makes us look less capable. As I get older, I get over my insecurities a little more, but there are days when the little voice inside says, "you can't do that". I want to work on being more confident this year. If I trust my gut about something I know to be true, I will be more confident and not feel like I need to be validated.<br />
7. Blog more! I started this blog almost a year ago, and haven't been very faithful to it. It mostly comes with the fact that I just don't make time to do it. Next year I want to start another blog for the bakery, so whether it is in here or there, I will make time to write more in it. I think it is an excellent way for me to keep track of the year's progression.<br />

Whoops. Well, all that matters is that I'm here, writing, now. The past few weeks I have especially been fired up in my kitchen. Maybe it's that summer fruit and veggie availability, I don't know. Last night I made a flan. The night before it was Vietnamese soft spring rolls with shrimp and tofu. I woke up this morning and started preparing to make some more strawberry preserves and then thought of throwing in some lychees with it. We'll see what happens. I'm going to start using Eric's nice Cannon camera to photograph my creations instead of the one of my iPhone, so stay tuned for nicer pics.<br />

I've been thinking more seriously about starting a business (with food, of course). I am in the process of writing down all my favorite recipes and over the next year I want to perfect them, tweak them, and make them in large quantities to see how they hold up. I go back and forth between baking and having some type of cookie company and an actual cafe that serves only breakfast and lunch. We'll see what the future holds. Over the next few months I should have plenty of time to more experimenting since I've decided to give up on finishing Culinary school. Mind you, I only needed this one class to finish. But today was my registration date, and that one class I need is not only completely full, but the wait list is full too. Blah. This is the class I have been waiting all year (literally since last year when it was full) to just get over with. But now I'm just over it, and you don't need an actual degree or certificate or other form of paper to get you along in the food industry, unless you take it somewhere else other than the kitchen, in which you probably need a Bachelor's (i.e. Food Writing, styling, etc). So I have decided that I'm done!<br />

My generous husband yesterday bought for us...me mostly...a Kitchenaid stand mixer. Folks, it's a thing of beauty. We got the professional one too, so it's got more juice and a bigger bowl. So I'm on a roll here. An urban homesteading roll!! I have been fantasizing about a house, with a dog, a veggie and flower garden, and a chicken farm. In that order. Then Saturday after I made some butter with leftover cream we had, I added dairy cows to the list. Oh, and just in case you were wondering, in this fantasy, of course I don't work. I just maintain our home and all the animals and gardens, and keep our pantry full of home-canned goods. Sigh, maybe one day. It's the simple things, people!<br />
So, I've been wanting to try my luck at home canning. I've never done it, but got lots of books at the library and have been reading stuff online. I bought some supplies at Ace Hardware a couple days ago. I thought I would start simple, with everyone's favorite, strawberry jam.<br />
Saturday morning I had a great time at the Irvine Farmer's Market and got lots of goodies. An entire flat of strawberries, golden chard and red carrots, vanilla beans, and Meyer lemons! I had to stop myself from buying more. <br />

I think I ate a whole pint of berries while I was prepping them for making jam. They're not organic, but they sure were tasty. I knew they would make a delicious jam, and I was right! It's so true what they say, that if you start with good ingredients, you can't go wrong.<br />

Making the jam was a little tricky. I macerated the strawberries in lemon juice and sugar for about 2 hours, then simmered them for about 30 minutes. I was a little short on the sugar so I don't think it gelled as well as it was supposed to. That was the tricky part. I read that if you don't follow the recipe exactly, or double it, you could end up with unwanted results. The thing is that, I thought these strawberries were so sweet on their own anyway that they wouldn't need the 1/3 cup that I cut out. Turns out, I was wrong. It came out really delicious and a little on the syrupy side, but too stiff to be a sauce. Still really good though! Eric and I already finished off a half pint jar.<br />

At first I thought I would just get a rack to put in my stockpot to use for canning, but my stockpot isn't quite large enough. So, I bought a boiling water canner at the hardware store, fitted with a rack. It's made of thin aluminum but is HUGE, big enough to make sure that you have plenty of room for water to circulate around each jar. Canning is intimidating at first, but once you do it, it's pretty easy and safe. Most foods that are canned are good forever but should be eaten within a year for the best flavor. What a great way to get homemade goodness all year round!<br />

This was a fun little project and I can't wait to start canning more stuff. Especially when our little balcony veggies start to show themselves. Mmmm, pickles...and Marinara sauce...<br />

Lately I've been trying to warm our space up with buying lots of plants to put not only inside our apartment, but creating a nice place to hang out on our lil balcony since we get good sun throughout the day, not too much, not too little. In addition, my husband Eric has been inspired to plant some vegetables in buckets, which are also known as SIP buckets (sub-irrigated planters). I've been into all the flowers that are popping up around the nurseries lately, and today I bought a Hibiscus shrub and potted it, along with a dozen and a half mini succulents! Moving from flora to fauna, we bought a hummingbird feeder. At first I wasn't sure if it was bad for the ecosystem, but everything I have been reading online says that it's fine for hummingbirds, since it's not their main source of food. It's kind of a quick grab and go, and their speedy little metabolisms burn everything off right away. I've just read that you shouldn't put any dyes in your feeder and just use a sugar-water solution. Last Friday and Saturday were both 80 degrees and beautiful, so I thought a key lime pie would be appropriate! It was pretty easy to make, with just a handful of simple ingredients.
